Santa Maria has its own style of barbecue, and locals are particular about it. Beef, usually tri-tip, is seasoned with salt, pepper and garlic and grilled over a fire of local red oak, then served with small pink pinquito beans, salsa and toasted bread. The custom goes back to the cattle ranches of the valley in the mid-1800s.
